Recipe: Cauliflower Pizza Base


I've been looking forward to trying cauliflower pizza base. I was worried it would just fall apart and I'd have to sit and eat with a knife and fork. To my surprise you can pick up a piece and eat as normal. Sure its a little floppy but it stays together. This is delicious and a great alternative to anyone wanting to reduce carbs, gluten free or sneaky way to get extra veges into the kids.



CAULIFLOWER PIZZA BASE

INGREDIENTS:
Small-Medium Size Cauliflower
1/4 cup Grated Parmesan
1/4 cup Grated Cheese (i used tasty)
1 TBS almond meal
1 Egg
Herbs (optional)

METHOD:
1) Preheat oven and baking tray (i used a pizza tray) to 220 degrees - fan forced.
2) Cut all the florets off your cauliflower and place into food processor. I ended up with 420g of florets. Pulse until cauliflower looks like fluffy snow (see photo below). If you don't have a food processor you can grate yours.
3) Place cauliflower into a microwave safe dish, cover and cooked for 4 minutes.
4) Tip cauliflower onto a clean dry tea towel and leave so it cools down. Once cool wring out as much water/juice as possible. I got 1/3 cup of fluid
5) Place cauliflower into a bowl along with the egg, cheese, almond meal and herbs (if you choose to add). Mix with wooden spoon until well combined.
6) Place baking paper on a chopping board, lightly spray the baking paper with oil. Tip the cauliflower mix out and press with hands to create the base. Make it fairly thin - around 5mm.
7) Slide the baking paper with the base onto the hot baking tray and cook for 12 minutes - until golden brown.
8) Remove from the oven and top with whatever pizza toppings you would like to use. Return to the oven and cook for 5-7 minutes or until golden.
9) Allow to cool a little, slice and enjoy







Master T scoffed down entire piece before Miss S could pick her first piece up. She isn't feeling too well so Master T ate half the pizza to himself... the boy can eat!

We've made this before - isn't it fabulous! We don't do it regularly but it is a great alternative. I even use it as a base to little mini muffin pan recipes.

I have yet to venture into the cauli base but it looks amazing and I love the idea. I have used cauli rice as a replacement for normal rice in a curry and it was great.
