I've been wanting to try a brownie recipe which would be suitable for a variety of people including those who are gluten free, sugar free, paleo or anyone just wanting to try something different. I'm always hesitant when trying alternative recipes to my favourite goodies thinking they can never be as good. But these are great! The texture is different but the taste is rich chocolaty goodness.
GRAIN FREE BROWNIES
INGREDIENTS:
50g Coconut Flour
40g Cacao Powder
140g Butter (melted)
200g Rice Malt Syrup
1 tsp Vanilla Extract
3 Eggs
METHOD:
1) Preheat oven to 150 degrees, fan forced. Grease and line a baking dish (mine was 22x14cm)
2) Mix together all the ingredients using a wooden spoon. Mix until well combined.
3) Pour the mixture into the baking dish and bake for 35 minutes or until a skewer inserted comes out clean (or small crumbs)
4) Cool for 30 minutes in the basking dish before cutting. Store in air tight container at room tempature or in fridge.
TIPS: You can replace cacao with cocoa and/or rice malt syrup with honey.
After i tasted i cut these in half to make 16 brownies. Very rich

Typically when things are everything free they also tend to be flavour free but these look deliciously chocolatey and moist!
